Recipe- Pumpkin Roll

Ingredients:
3 eggs
1 cup Sugar 
2/3 cup Pumpkin
1 teaspoon Lemon juice
3/4 cup All-purpose flour
1 teaspoon Baking powder
2 teaspoons Cinnamon
1 teaspoon Ginger
1/2 teaspoon Nutmeg 
1/2 teaspoon Salt

Filling:
8 ounces Cream cheese -- softened
4 tablespoons Butter -- or margarine
1 cup Powdered sugar
1/2 teaspoon Vanilla

Preparation:
In large bowl, combine eggs and sugar, beating well. Add pumpkin and lemon juice, mixing until blended.

In separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture, mixing well. Spread batter into greased and waxed-paper lined 10-by-15-inch jelly-roll pan.

Bake at 350 ° for 15 minutes. Remove from oven. Cool for 15 minutes. Place cake on clean tea towel sprinkled liberally with powdered sugar. Cool 10 minutes longer. From 10- inch side, roll cake up in towel. Set aside.

While cake is cooling in towel, prepare filling. Beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth.
Unroll cake. Evenly spread filling over cake. Roll up cake (without the towel). Wrap in plastic wrap. Cover and chill at least 1 hour. Slice before serving. Keep leftover slices refrigerated. This pumpkin roll freezes well.

Sniffing out Drug Use

 A recent article from ABC News talks about a new trend in keeping parents in the know. It seems that drug sniffing canines retire from their airport, DEA, or security jobs and into private sector companies such as sniff dogs. These companies offer up the noses of their furry friends to parents at a rate of $200 an hour.   The dogs can pick up scents from a number of hard drugs as well as marijuana residue from the previous night. This is thought to be a more discreet and less confrontational way for parents to check up on their kids.  To find out more about how they work and what the company is about, you can visit their website by clicking here. To read the full article, click here.

NH4 Showcase- Candace Wiggins

Candace Wiggins has been practicing her natural high, basketball, since she could walk. She has athleticism in her blood. She was born in Baltimore, MD, where her dad played for the Baltimore Orioles.   As a child, Candace?s family moved to San Diego, CA where she attended school and grew up to be an amazing basketball player. Candace won numerous awards in both high school and college, ranging from player of the year, McDonald?s All American, to a gold medal she won as captain of the US Junior National team. She was the only female player in NCAA tourney history to score 40 plus points in multiple games. In addition to that giant feat, she was also a four-time All-American, something fewer than 10 people can claim. Wiggins was drafted as the overall number three pick to the Minnesota Lynx. This past June, she was named Rookie of the Month by the WNBA.
